I’m not sure if you can get this software or whatever it is for yourself, but I think Apple must have hooked up something to the connector on the bottom of the iPad, and connected it to some sort of device that recorded the screen. I think you can do this if you jailbreak the iPad, but I’m not positive.

They wrote the software for it..
So just like remote desktop in Windows or
they will have written a private copy screen application and used the wifi to copy it to another iPad (point a TV camera at it) or Macintosh to output to the projector directly.
They can install any application they self-approve of afterall !
